It could be all the fungus that’s been growing. Sure, it’s technically alive already, but the spray could have animated it. That would account for the missing water too.

If the castle has been alive all along, and then, when it got the ability to move its towers, its first move was to swat a derro, it must have found the derro particularly irritating. I understand why everyone else would find the derro particularly irritating, but it is not so clear why the castle finds them more irritating than Grawlf and his fungus, for example.
I don’t think the ooze inside the castle walls is in control of the castle’s movement. Think of it as though someone animated a suit of armor while you were still in it.

Remember, she’s green because her party was out of supplies and had to drink from a well that turned out to be cursed or something.
She’s philosophical enough to know that their luck could have been worse. She knows that luck can be bad as well as good.
So, the castle was alive even before it was animated? Well, gives “Castle Life” another meaning, I suppose.

But the water is missing because they tossed a recanter in there.
The water level in the moat was gradually lowering before that too.

Now, I hate to play the “I told you so” card, but…
I called it last strip.
Although I didn’t fully envision the castle being animated as a golem independently of the living creature inside it… the thick plottens.
