Alternate solution: there’s a prestige class in Faiths & Pantheons called Ocular Adept (humanoid cleric worshiping the beholder goddess the Great Mother). No idea if it’s any good though; you have to be evil and I mainly play Lawful Good characters.
The sad part is that I know many, many players who’d take the class in a heartbeat. ‘Who cares about fluff?’ they’ll say. ‘The mechanical advantage is all that matters!’ And the sad part is, when the rest of the party attempts to destroy this sin against nature, they get yelled at for it. (sigh)
@JackLJ: your DM is right. Beholder class has a racial prerequisite of being a beholder. The reason Mimic can multiclass into it is that he has a racial ability (shapeshifter) that lets him ignore racial prerequisites.

Situations like this are exactly why the “monster class” rules are very specific about you having to take the whole thing; no dabbling allowed!
…Why is his manskirt so short? I did NOT need to see his “18 Charisma” up close and personal. That’s just wrong.
So he multiclassed into Mongrelman? That’s either the best or worst idea I’ve ever seen.
